I just made a lentil and kale soup. It is wonderful! I’m experimenting with all kinds of vegetables. This is fun and filling.
I used one red onion, five carrots, four stalks of celery, two cups of lentils soaked over night, then I added kale at the end after boiling it in seasoned water to taste. I never cook with a recipe but I dumped it all in the pot until the beans were tender.
I’m so happy with myself. This is a great soup that has substance. I don’t fell like I’m missing any meat.
