As it turns out, change is harder than we think. Because of my prior diet change, I worked hard to change my diet to vegan. My husband heard my readings from The China Study but had not yet read the book himself. He enjoyed eating a salad from time to time, but cherished his weekly trip to Steak’n’Shake for his patty melt and milk shake. He made major changes: switched milk to almond milk; tested my vegan meals; and made fruit smoothies for us every morning. But even with seeing the effect of my diet changes, even knowing the gist of the knowledge from the book, even living with a vegan, we both saw the challenges of changing a standard American diet to vegan.
